1 Combine all the dressing ingredients with a pinch of salt and set aside.
2 Remove any skin or bones from the salmon and cut into 2.5 cm cubes.
3 In a large mixing bowl combine the salmon, cucumber, spring onions, fried shallots, sesame seeds and chilli. Drizzle over 3-4 tablespoons of the dressing and season to taste. Gentle mix until everything is evenly coated. Set aside for 5 minutes for the flavours to meld.
4 Season the rice and drizzle with enough dressing to lightly coat, toss to combine.
5 Divide rice between bowls and top with salmon. Dress with avocado, extra sesame seeds, fried shallots and spring onions. Serve immediately.
