Buddha bowls (AKA nourish bowls, macrobiotic bowls and rainbow bowls) are an increasingly popular dish popping up on Instagram’s, cafes, and cookbooks. Buddha bowls are a really healthy meal as they are usually nutritionally complete and well balanced. Whenever I create my Buddha bowls I aim to create a rainbow of different coloured vegetables, a serve of grains, a good source of plant based protein, and healthy fats from nuts, seeds, oil or avocado. Buddha bowls could also be described as a deconstructed salad as each ingredient is often placed next to each other. Going into the winter months your body will crave warmer and heartier foods but its also important to maintain a highly nutritious diet to prevent you getting sick and keep your energy levels up. I’ve created this warm Buddha bowl recipe using all seasonal ingredients from The Kitchens to keep you nourished this winter.
